1 red or green chili, very thinly sliced
1 clove garlic, thinly sliced and chopped
½ inch chunk of fresh ginger, peeled, sliced and finely chopped
Prepare the courgettes.
Cut the courgettes into 4 pieces and then cut each piece in half. Place each cut piece face down and slice it into very fine strips about 2mm thick.
Cook the ingredients.
Splash a little peanut oil into a wok and when it is hot throw in the chopped garlic and stir fry for 1 minute. Add the ginger, the courgette strips and the chili. Stir fry until the courgettes start to go translucent. Season with a little soy sauce and then serve.
