a pound of courgettes, cut into 4-5-inch fingers
1/4 cup of whole wheat flour
2 cups of breadcrumbs
salt & pepper
1/2 tsp of garlic powder
1/4 tsp of cayenne pepper

Begin by pre-heating the oven to 425 degrees. While it’s heating, prepare the baking sheet by lining it with parchment. You can use any non-stick method you prefer.
Prepare the coatings
Then, whisk the two eggs in a shallow dish and add two tablespoons of water in it. On a separate dish, combine your spices together—salt, pepper, garlic powder and cayenne pepper plus the breadcrumbs.
Flour > Egg > Breadcrumbs
Put the flour in a large zipper bag, add the courgette strips, zip the bag close and shake well. Make sure all the strips have been coated with flour. After shaking, take out the strips one by one from the bag, dip it in the whisked egg and then coat it with the breadcrumb mixture. Take note to coat every part of the courgette. Do the same with all the courgette strips.
Arrange all the breaded strips on the baking sheet, place it in the oven to bake for about 15-20 minutes or until they turn a golden brown colour. They are crispy and delicious and best eaten immediately.
