Indian Stuffed Courgettes Recipe

Experience a Spicy, Yummy Courgette

An authentic Indian recipe for stuffed courgettes which they call Teenda. They can be served alone or with spicy rice as a main meal.


2 courgettes
1 onion, finely chopped
2 tomatoes, chopped
4 tablespoons oil plus extra for frying
2 teaspoons dried mango powder
1 tablespoon garam masala
1 teaspoon chili powder
4 tablespoons cream
Salt to taste

Recipe Instructions

Preheat the oven to 175C.

Prepare the courgettes.
Wash and dry the courgettes and slice off the top. Scoop out the flesh from the centre. Keep the tops to use as lids. Heat oil in a pan and deep fry the courgettes for 1 – 2 minutes on all sides. Drain off the excess oil and keep them aside.

Make the filling.
Heat 4 tablespoons of oil in a frying pan and add the onion. Sauté the onion until it is transparent and then add the tomatoes and cook for another 4 – 5 minutes. Add the garam masala, chili powder, mango powder and salt and stir in the cream. Cover with a lid and cook gently over a low heat for a few minutes.

Fill the courgettes.
Fill each courgette with the tomato and onion filling and put the lid on the courgettes. Place the courgettes on a baking tray and bake in the oven for 5 – 7 minutes. Remove the courgettes from the oven and take off the lid. Serve while still hot.
