3 courgettes, cut lengthwise into ¼ inch thick slices
1 garlic clove, crushed
225g Mozzarella cheese, cut into thick slices
2 tablespoons olive oil
¼ teaspoons wine vinegar
1 tablespoon parsley, chopped

Prepare the courgettes.
Place the courgette slices into a mixing bowl and add 1 tablespoon of oil, ¼ teaspoon salt and black pepper. Mix together well making sure the courgette slices are well coated. Place the courgette slices under the grill for 8 – 10 minutes, turning once, until they are tender and golden.
Return the courgette slices to the mixing bowl and add ½ tablespoon of oil, some salt, vinegar, garlic and parsley. Mix the ingredients together well and let the courgette cool a little.
Place the mozzarella slices on a serving platter in a circular pattern and drizzle over the remaining olive oil and sprinkle with a pinch of black pepper. Add the courgette slices, folding them over in half and tucking them between the slices of cheese.
