10 small courgettes
100g chopped onion
75ml olive oil
2 garlic cloves, crushed
225g tomato paste
25g mint, chopped
25g dill, chopped
Cook the ingredients.
In a frying pan, sweat the chopped onion and garlic in the olive oil. Add the tomato paste, the dill, the chopped mint and seasoning and cook for 5 minutes.
Cut the courgettes into 0.5cm thick slices and moisten them with a little water. Season them with salt and add them to the pan. Let them simmer for 10 minutes.
Remove from the heat and let them cool.
Serve them in a dome-shaped vegetable dish.
