900g courgette, peeled and cut into slices
1 green pepper, chopped
2 tomatoes, chopped
75g uncooked white rice
1 onion, sliced
1 tablespoon olive oil
Salt and freshly ground black pepper
Cook the vegetables.
Heat the oil in a frying pan over a medium heat and sauté the onion for 3 minutes. Add the tomatoes, courgettes and green pepper and stir together. Season to taste with salt and pepper, reduce the heat and simmer for 5 minutes.
Add the rice.
Stir in the rice and the water and cover with the lid. Cook over a low heat for 20 minutes.
