¾ cup Rotini, or any other pasta
1 cup sliced courgettes
3 teaspoons minced garlic
1 tablespoon olive oil
2 teaspoons lemon juice
¼ teaspoon dried basil
Boil the pasta.
Bring a pot of water to the boil over a medium heat and add the pasta. Cook the pasta until it is firm but tender, drain off the water and place the pasta in a bowl.
Cook the courgettes.
Heat up the olive oil in a frying pan and add the garlic and basil. Once the garlic and basil are hot add the courgette slices. Cook the courgette slices for 5 minutes until they start to brown and add the lemon juice. Continue cooking the courgettes until they are completely done.
Put the courgette slices on top of the cooked pasta and sprinkle over the Parmesan cheese.
