This is a courgette soup recipe that is simple and easy to make and it can be served hot or chilled, the choice is yours.
450g courgettes, thickly sliced
1 medium onion, sliced
700ml chicken stock
¼ teaspoon rosemary
¼ teaspoon oregano
Salt and pepper to taste
Cook the soup.
Place all the ingredients into a large saucepan over a high heat and bring it to the boil. Reduce the heat and cover the saucepan with a lid and simmer for 15 – 20 minutes.
Remove the soup from the stove and pour the soup into a blender. Blend until a smooth consistency is reached.
Reheat slowly over a gentle heat and serve hot, or chill and serve cold.
