Courgette, Sausage and Tomato Spaghetti Recipe

A Mouth-Watering Pasta Recipe

An alternative to the more traditional spaghetti Bolognese. This sausage, courgette and tomato spaghetti dish is a meal everybody will love.


1 courgette, roughly diced
4 pork and herb sausages, cut into bite size pieces
350g jar vegetable pasta sauce
200g dried spaghetti
Handful fresh basil leaves, roughly torn

Recipe Instructions

Make the sauce.
Heat a little oil in a large frying pan over a medium heat and add the sausage pieces cooking them for 6 – 7 minutes until they are golden. Add the courgettes and cook for another 2 – 3 minutes then stir in the pasta sauce and seasoning. Simmer for 5 minutes until the courgettes are tender and the sauce has reduced slightly. Stir in the basil leaves.

Cook the pasta.
Bring a large pot of lightly salted water to the boil and add the spaghetti. Cook the spaghetti until it is tender but firm. Drain the pasta well and return it to the pot.

Combine the ingredients.
Add the sauce to the pot with the spaghetti and toss it all together.

Divide the spaghetti between 2 bowls and garnish it with some extra basil leaves.

    Great recipes but you need to sort out the printing issue, when you print the recipes from this site it leaves out the ingredients list. Keep up the good work!
