6 medium courgettes, grated
1 large carrot, grated
1 med red bell pepper, julienned
1 stalk celery, minced
1 small onion, minced
2 tablespoons fresh parsley, chopped
¾ cup mayonnaise
2 tablespoons red wine vinegar
1 tablespoon honey
2 tablespoons Dijon mustard
1 teaspoon prepared horseradish
2 teaspoons salt
2 tablespoons fresh dill, chopped
1 tablespoon olive oil
¼ teaspoon ground black pepper
Prepare the courgettes.
Toss the salt onto the courgettes and mix together well. Place them in a colander and let them stand for 30 minutes. Once done, rinse them under cold water, drain them and squeeze out the excess moisture.
Make the salad.
Put the courgettes into a bowl and add the carrot, red pepper, onion and celery. Toss together well. Sprinkle in the parsley and dill.
Make the sauce.
Mix together the mayonnaise, mustard, vinegar, oil, honey, horseradish and pepper. Blend together.
Finish the coleslaw.
Stir the sauce into the salad, taste and season if necessary.
