Courgette Carbonarra Recipe

Courgette Vegetarian Main Meal

Thyme and courgettes complement each other very well and using different colour courgettes will enhance the presentation of this dish.


2 courgettes; one red, 1 yellow, quartered, deseeded and cut into penne shapes
2 cups penne rigate
5 slices bacon, chopped
3 cloves garlic, minced
½ onion, diced
¼ red bell pepper, sliced and cut into penne shapes
½ cup heavy cream
2 egg yolks
¼ cup dry white wine
½ cup parmesan, grated
2 teaspoons fresh thyme
Fresh cracked black pepper
Pasta water

Recipe Instructions

Boil the pasta.
Bring a large pan of water to the boil and add some salt. Put the penne in the boiling water and boil for 10 – 12 minutes. Drain the pasta, reserving some of the pasta liquid.

Cook the bacon.
Put the bacon and some water in a frying pan leaving the fat on the bacon. Bring the water to the boil and boil until the water has evaporated and the bacon has cooked off the fat and browned. Leave the bacon in the pan but take out the excess fat, leaving only 2 tablespoons in the pan.

Cook the other ingredients:
Add the chopped onion, courgettes, pepper and black pepper to the pan with the bacon. Simmer for 5 minutes until the vegetables have softened. Add the thyme, garlic and wine and simmer until the wine has reduced. Remove from the heat and set aside.

Make the egg sauce.
Whisk together the egg yolks, cream and the parmesan. Set aside.

Finish the dish.
Add the cooked and drained pasta to the pan and pour over the sauce. Add a little of the pasta liquid and toss the pasta making sure that all the ingredients are coated well. Cover the pan and let the residual heat from the pasta cook the egg sauce.

    How can you merrily write below the above title that this dish is a vegetarian main meal when halfway down the ingredients it asks for chopped bacon????
