Prepare the courgettes.
Shave the courgettes into ribbons using a sharp potato peeler or a mandolin.
Make the marinade.
Mix together the lemon juice, olive oil, tarragon leaves, salt and pepper in a bowl. Put the courgette shavings into the bowl and let them marinate.
Just before serving, scatter over the day-lily petals.
