Courgette and Cumin Soup Recipe

A Delicious Meal for Rainy Days

A delicious courgette soup with cumin to intensify the flavor. This soup is equally as tasty served hot or chilled.

Ingredients

350g courgettes, thickly sliced
1 onion, chopped
150g potatoes, peeled and cubed
450ml chicken or vegetable stock
25g butter
1 clove garlic, crushed
300ml milk
1 teaspoon ground cumin
Freshly ground pepper

Recipe Instructions

Fry the ingredients:
Melt the butter in a large saucepan and add the onions and garlic. Sauté the onion and garlic for 5 minutes until they are soft. Add the cumin and stir together. Stir in the potatoes and most of the courgettes and cook for 2 minutes.

Cook the soup.
Add the stock, milk and pepper and bring the mixture to the boil. Reduce the heat, cover with the lid and simmer for 15 minutes until the vegetables are soft.

Puree the soup.
Puree the soup and serve hot or cold garnished with thin slices of courgettes.

    Soup is fantastic but I’d just make one adjustment to the recipe. When adding the cumin (or any other spice) first make into a paste by adding a little boiling water to the cumin, then add to the onion oil mix. That way the spices won’t get burned when you add them directly to the oil. You should do this for any recipe that requires adding spices to oil (curries etc).
