Courgette and Cottage Cheese Toast

Preheat the oven to 180C. Spray a baking sheet with olive oil and place in the oven.

Make the egg bread.
Blend together the cottage cheese and the eggs until you get a smooth, pale yellow liquid, season the mixture with salt and pepper. Place the bread into a shallow dish and pour over the egg mixture. Leave the bread in the fridge to soak up the liquid.

Bake the bread.
Place the slices of bread onto the preheated baking sheet and put it in the oven. Bake for 5 minutes then turn the bread over and bake for another 5 minutes on the other side.

Make the salsa.
Heat the olive oil in a frying pan and add the sweet corn, courgette, chili and spring onions. Cook for 5 minutes stirring continuously. Add the cumin, salt and pepper and stir together well. Add the chopped coriander.

Serve.
Serve the toasted egg bread topped with the salsa.
