3 medium courgettes
½ cup cracked bulgur wheat
1 medium onion, peeled and chopped
3 medium carrots, peeled and finely chopped
1 clove garlic, peeled and crushed
50g Cheddar cheese, grated
1 tablespoon olive oil
½ stock cube
Prepare the bulgur wheat.
Put the cracked bulgur wheat into a bowl and cover it with 1 cup of boiling water. Cover the bowl with a clean cloth and leave it for 25 minutes until the water has been absorbed and the wheat if fluffy.
Fry the ingredients.
Heat the olive oil in a frying pan and throw in the onion. Sauté the onion for 5 minutes. Add the garlic and the carrots to the onion and sauté for another 5 minutes stirring so that they do not burn.
When the carrots are soft add the courgettes and the grated cheese to the pan. Mix the ingredients together well, cover with the lid and heat through.
Finish the salad.
Add the prepared bulgur wheat to the pan and mix it in well. Serve immediately.
