For the crust;
4 cups courgettes; peeled, shredded, drained and pressed dry
2 cups cooked rice
1½ cups mozzarella cheese, shredded
1 cup Parmesan, grated
For the filling;
1lb ground beef, browned
1 med onion, chopped and browned
1½ cups spaghetti sauce
2 cups cheddar cheese, shredded
1 teaspoons oregano
½ teaspoon salt
Preheat oven to 400F.
Make the crust.
Combine all the crust ingredients together and press it into a greased jelly roll pan – 15 x 11 x 1. Put in the oven and bake for 20 – 25 minutes until the crust has set and has lightly browned.
Make the filling.
Combine all the ingredients for the filling except the cheddar cheese. Pour the mixture over the crust and then sprinkle the cheddar cheese on top. Return to the oven and bake for 15 minutes. Remove from the oven and let it stand for 5 minutes before cutting and serving.
